Vman's Warm Shrimp Salad with Honey Balsamic Dressing

Last week, we were doing lot's of running all weekend over northern Ohio. My local market was having a sale on their seafood. I have a weakness for shrimp. ;-)  When we got home last Sunday afternoon we were not hungry for a normal Sunday type meal and wanted to kinda chill out anyway. These little guys were too small to put on the grill. But shrimp sounded pretty good. Why not a salad? Why not a warm salad. Here is what I did..... ;-)

Here is what you need
        1.5 lb shrimp shelled and deveined
           2 tbsp extra virgin olive oil
        Appx 4 - 5 cups Chopped romain lettuce
        1 cup sliced red pepper
        1 cup chopped tomato
     1/2 feta cheese
        1 cup chopped cucumber 
     Dressing      
     1/4 cup balsamic vinegar
     1/8 cup extra virgin olive oil
         2 tbsp honey
       1/4 tsp ginger
       1/8 tsp black pepper

Here is what you do
          In a medium fry pan on med-high heat add the olive oil (as it heats it becomes more viscous and will spread around easily)
          Add shrimp and stirfry until they have lost all gray color and are pink and non translucent.
          
         In a separate bowl gently toss to combine the Romain, feta, tomato, red pepper, and cucumber.

         Prepare the dressing
          Mix all ingredients into a separate small bowl or jar.
          In the bowl whisk vigorously,....In the jar shake vigorously

          serve the salad mix in a bowl, top with the warm shrimp and drizzle on the dressing.
