Vman's Chicken and Shrimp Orzo
Here is what you need
3/4 lb Chicken Breast (cut into 1" chunks)
3/4 lb Raw shrimp (deveined)
8 oz Orzo pasta
2 - Roma or plum tomatoes (seeded and diced) or 1 - 14oz can of diced tomatoes drained
2 tbsp Cajun seasoning
2 tbsp Worcestershire sauce
1/4 cup Feta cheese (optional: sun-dried tomato and herb)
Here is what you do
Use half the cajun seasoning to sprinkle on the shrimp to coat them and set them aside.
Drizzle the Worcestershire sauce on the chicken chunks and distribute this evenly all over the pieces. Then sprinkle the rest of the cajun
seasoning over the chicken evenly and set them aside.
In a medium pot bring 2 qts of water to a boil (optional: salt to flavor) add the orzo and cook for 7-8 minutes until "al dente". (to me, this means
does not stick to my teeth)
Pour the cooked into a colander to drain the water and sprinkle with cold water to stop the cooking process. Drain all the water and set pasta
aside. It can rest in the colander.
Using a heavy skillet, add a coating of olive oil and bring the heat up to medium high. Stir fry the chicken chunks until you begin to get a nice
brown coloring. Remove the chicken setting them aside. Now toss the shrimp into the skillet and cook them until they turn a nice pink color.
When the shrimp are finished add in the tomato and give them a stir to heat them but not over cook. Now reduce the heat to medium and add the
orzo and the chicken to the skillet also. You want to mix everything nicely before removing from the stove. 1 minute before removing from the
stove toss in the feta cheese. Serve and enjoy! ;-)
