Vman's Slow Cooked Balsamic Roast Beef
This dish is quick simple and delicious. Don't let the picture make you believe differently, It only looks involved but it is not. You will be very pleased by the set up simplicity...then go about your business and in 4 hours have a super tender roast that can now be shredded and create a roast beef sandwich with a French Dip au jus!
Here is what you need
Slow Cooker
1 appx. 3 lb Round Tip beef roast
1 cup beef stock or broth
1 tbsp Balsamic vinegar
1 tbsp Soy Sauce
1 tbsp honey
3-4 cloves chopped garlic
Here is what you do
Prepare the slow cooker porcelain insert with a cooking spray. (this makes clean up much easier)
Place the roast inside the slow cooker.
Mix all the liquid ingredients together and mix thoroughly.
Add the chopped garlic to the mixture.
Pour the mixture over the roast.
Set slow cooker to high and cook for 4 hours. (Now go and do what you need to do!)
After 4 hours turn off the slow cooker and let the roast rest for about 15 minutes.
Transfer the roast to a plate and gently shred the beef by separating the fibers with a fork. You will be surprised by the ease of this part.
To make the Au Jus, separate the fat form the juices left in the slow cooker. You can pour the juices through cheese cloth to help accomplish
this step. Serve the shreded beef in a bun, dip in the au jus and enjoy!!
