Vman's Banana Pancakes
When I was a kid momma would generally save making pancakes for the weekend, and usually on Sunday. She may not remember that, but it became a tradition in my mind. I remember her making them so seemingly effortlessly and my not being able to eat enough of them. When my family started to grow up I wanted to be able to do the same thing. A buddy of mine had told me about how he would cut up bananas and put them on top of the pancakes and that his kids loved them. Hmmmmmm, what if I put the banana in the batter...O.K. now we are on to something. ;-) There are so many variations to this recipe and that's what I love about cooking. A basic idea with plenty of room for jazz. A little Steely Dan in the background. Here we go.
Here is what you need
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon nutmeg
1 teaspoon vanilla
2 tablespoons honey
2 ripe bananas (1 chopped, 1 mashed)
2 cups buttermilk
1/3 cup milk
2 eggs
Here is what you do
Mix all the dry ingredients together thoroughly in a large bowl and in a separate bowl mix all the wet ingredients thoroughly.
Make a well in the center of the dry ingredients and pour the wet ingredients into the well and mix well...do not worry about lumps (remember there
is chunk of banana in there)
Oil a heavy iron skillet or griddle medium high
When surface is hot enough to make a bead of water dance you are ready to cook.
Spoon batter onto cooking surface to make at least 3inch in diameter circles. (option: at this point you can drop a few fresh blueberries onto the
pancake too)
When batter begins to bubble on the pancake, it is time to flip over
cook on opposite for about 1 minute.....nice golden brown.. onto the plate!
Butter, syrup of choice, or powdered sugar....ENJOY!!
