Vman's Tomato and Pepper Fritatta
Around the house this is referred to as the crustless quiche.The preparation is quick and this is perfect for breakfast (with a side of toast), lunch (with a garden salad) or dinner (with grilled asparagus). One thing is for sure you will get your protein and a good serving of veggies in this and the veggies can provide most of your seasoning requirements.
Here is what you need
Preheat oven to 350F
nonstick cooking spray
1 tbsp olive oil
6 eggs
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1/4 cup chopped sweet onion
1/8 cup heavy whipping cream (optional)
A little Romano for a topping
1 roma tomato sliced
1/4 tsp or less each kosher salt, seasoning salt, black pepper
Here is what you do
Crack all six eggs into a bowl and add the whipping cream and scramble to make a smooth mixture. At this step you can add the dry
seasonings also.
In a separate small skillet sweat* the veggies lightly in the olive oil. This will soften the veggies a little. OR skip this step if you want a little
more crunch in the veggies.
Add the veggies to the egg mixture and mix throughly
Lightly coat a medium size skillet with the cooking spray
Pour mixture into the medium skillet and place tomato slices as seen in figure 1 below
sweating is cooking the vegetables in a little oil (fat) under low heat so that they cook in their own juices. The idea is to soften the vegetables
without browning them.
