Simple Meatloaf

When I was a kid, I never cared for meatloaf. I would eat it though, but always after I had turned it into a quasi-hamburger. The very idea of using ground beef for anything but a hamburger was beyond my scope of imagination. I was part of the generation who was there, when Ray Croc served up the first McDonald's 100,000 hamburgers, and that was the way hamburger was menat to be served. to fashion it in the shape of a loaf and coat it with a tomato paste type coating was simply cruel and unusual punishment for kids everywhere and the ground beef.  Well things have changed, taste have changed and now I absolutely love a meatloaf. I especially enjoy this one and am working on a variation which I will share later into the season. Not necessarily considered summer fare, here is a tasty rendition of the Simple Meat Loaf.

Here is what you need
        2 tablespoons EVOO (extra virgin olive oil)
        1 cup chopped yellow onion
     1/2 cup chopped celery
     1/2 cup chopped green bell pepper
        2 tbsp minced garlic
      1/2 tsp italian seasoning
      1/2 tsp cajun seasoning
      1/2 lb italian meat balls
    1-1/2 lbs ground round  
         2 eggs
      1/2 cup heavy cream
      1/4 cup ketchup
    1-1/2 tsp Dijon mustard
         1 tsp Worcestershire sauce
      2/3 cup bread crumbs 

Here is what you do
        Position a rack in the center of the oven and preheat to 350F
        Heat the olive oil in a medium size skillet over a medium 
        Add all the chopped veggies garlic and seasonings into the skillet heat about 7 minutes, until soft and onions begin to brown. 
        Then set the veggies aside and let them cool
        In a bowl combine the ground round and the meatballs

        In a separate bowl combine the eggs, heavy cream, ketchup, dijon, Worcestershire sauce and mix thoroughly using a whisk.
        Add the ground meat to the egg mixture and mix with your hands...add in the bread crumbs and mix thoroughly.
        Transfer the mixture to a 9 x 5 loaf pan. Using a silicon spatula smooth the top to shape a loaf.

Make a glaze by combining the following ingredients and mixing well; then spread over the top of the meatloaf.  
        1/2 cup ketchup
           2 tbsp light brown sugar (or brown sugar blend substitute)
           1 tsp Worcestershire sauce
         1/4 tsp (optional) Hot sauce

        Place meatloaf in the oven and bake uncovered for 1-1/2 hours. 
        Remove from oven and let the meatloaf rest for about 10 minutes before slicing and serving.
