Impossibly Easy Chicken Pot Pie
This is a test recipe that I retrieved from and app called BigOven. It contains some very common products and I put it to the test to see if it really stands up to its name. I happen to love chicken pot pie and continue to work in my kitchen to "Kitcheneer" and original. Now the week before last, we had three consecutive days of 90 degree weather. And just last week we were waking up to temps in the 40s. I take my dogs out around 6:30 and have seen our breath at that time of day, so its chilly. Chilly weather is perfect for some great comfort food and what is a great comfort food...chicken pot pie.
My Review: This recipe is so incredibly simple that I am sure I will use it again and again and with different flavors. Cream of broccoli, cream of mushroom. Which leaves lots of room for imagination. But not only is it simple to make it is really quite delicious. In fact the 9 inch dish just isn't enough, but that's ok, because this recipe can easily be modified to suit your needs. It should not be called "Impossibly Easy", it should be called "Impressively Easy and Good"

Here is what you need
1 2/3 cup frozen mixed vegetables
2 chicken breast (cooked) cut up
1 10.75 oz can condensed cream of chicken soup
1/2 cup milk (for the soup) (I threw this part in)
1 cup Original Bisquick mix
1/2 cup milk

Here is what you do

Preheat the oven to 400F. Thaw the frozen veggies either in microwave or under running water and drain thoroughly. (Recipe doesn't call for this, but I don't want that extra water in the pie.) Mix the 1/2 cup of milk to the condensed cream of chicken soup. (Recipe does not call for this either, but I believe it makes the gravy creamier) |
The chicken breast, cut up , should yield appx 1 1/2 cups of chicken. Mix the condensed cream of chicken soup with the chicken breast meat, and the mixed vegetables and pour into an ungreased 9" pyrex dish. Mix the 1 cup of Bisquick mix with the 1/2 cup of milk with a fork and pour over the mixture in your dish. |
