Vman's Grilled Teriyaki Pork Sirloin Cutlet
As I write, it is Sunday and everyone is here and there doing there thing before the start of a new week. This has been a relatively lazy weekend and we're really not interested in getting into to much activity this evening. But I happened to bring home some pork sirloin cutlets the other day and this is a perfect day for marinating them and putting them on the grill. My Chicago Homeboy Leighton Toney called me yesterday while in traffic on the Kennedy Expressway and described something he was drinking from an Italian spot on the North side. Lime juice, pineapple juice over Ice, I think he may have mentioned watermelon also...well this got me inspired that the lime juice and pineapple juice would make a really nice combination in a dance with a splash of vodka! So I'm going to present that here also! Vman's summer drinks will debut with the Lime Pineapple Martini (VLPtini)! Oh yes, your Homeboy enjoys a nice cocktail too!! Just wait until DA BEARS,...I mean...football season...but I'm getting ahead of myself.

Teriyaki Marinade
Here is what you need
1 cup soy sauce
1 cup pineapple juice
3/4 cup brown sugar
1/4 cup Worcestershire sauce
3 tbsp distilled white vinegar
3 tbsp olive oil
3 tsp onion powder
2 tsp garlic powder
1 tsp grated fresh ginger
4-5 pork sirloin cutlets
Here is what you do
Mix all the ingredients together stirring until all the brown sugar has completely dissolved.
Lay pork cutlets in a pan that will accomodate them without stacking.
Pour marinade over the cutlets, cover and refrigerate for 2 hours (or you can let them marinate overnight)
Prepare your grill as instructed in the recipe for the ribeye (see Vman's Grilled Ribeye with Blue Cheese)
Allow the grill to get very hot! That's how you get the nice sear lines. Make sure your coals are even as not to make uneven hot spots. You want
even heat and not one that will flame up.
Grill cutlets about 7 minutes on each side. When the meat is white all the way through it is ready. Brush with your favorite barbecue sauce or
make your own. and Voila!! Enjoy!!

Vman's Lime Pineapple Martini (VLPtini)
On a warm day when you are just chilling on the deck, patio or porch try this and let me know what you think. I wil be featuring some more summer cocktails and virgin drinks across the season. This one just struck me as a unique combination that I could imagine being refreshing and delicious. Memorial Day is right around the corner. Let's all plan for a fun and safe holiday with family and friends.
4 oz Premium Vodka ( I used a lemon lime citrus)
4 oz Limeade (Frozen concentrate is good)
4 oz Pineapple Juice
Chunk Pineapple (Garnish)
1 Lime (sliced for garnish) hang on glass or float
Vodka, Limeade and Pineapple juice all go into a shaker with ice. Shake vigorously for a few seconds..Pour into
glasses...add pineapple (3 chunks to a toothpick) and lime ring...Serve!
