Vman's Cilantro Honey Lime Grilled Chicken
I am not giving up the summer lightly! We had one really good week of summer where the temperatures were above 85F and that just isn't going to cut it,because the following weeks had us actually bringing along a sweater or a jacket. It was August. When we took our oldest back to school, I actually walked out of the house with a jacket. Now I keep my grill out all year long and am perfectly happy queing up something in the snow, but I truly prefer the summer. Therefore I wanted to do something that would bring the grill and a taste of early summer back to the table.
Prep time: 10 minutes
Cooking Time: 40 minutes
Here is what you need
A package of chicken thighs (bone in is what I used)
1/4 cup balsamic vinegar
1/4 cup chopped fresh cilantro
4 cloves of garlic finely diced
1/2 tsp chicken seasoning
2 tbsp honey
The juice of 1 fresh lime
Here is what you do
Dust the chicken breast with the chicken seasoning. Prepare the grill with the coals only under one half of the grill. Close the grill cover and let
the grill heat up for about 10 minutes, then place the chicken on the grill. (Photo on left)
In a small bowl combine all the other ingredients and whisk together well. (Middle Photo)
After the chicken has been on the grill for 10 minutes turn each piece over. Now begin brushing on the cilantro honey lime mixture. Return grill
cover and cook for 10 minutes. Now, turn each piece again and brush with the cilantro honey lime mixture...cover and cook for 10 minutes. The
chicken has now cooked for 30 minutes. Brush on more of the cilantro honey lime mixture with out turning the pieces over again and close the
cover and let cook for 7 more minutes. This will caramelize the mixture on the chicken and create a nice browning. (Photo on right)
This can be prepared with the skin on or the skin off. I prefer the skin on for more flavor, but if you want to eliminate unnecessary fat content
skinless is best and still plenty of flavor. I served this with a side of greens (collards and kale).
